コラム3 荒野に生い茂るワラビ (Column 3: Bracken in Moors)
荒野には、ヒースだけでなくシダ類が生えているところもある。
初夏のころ、その荒野で日本のワラビによく似たシダの新芽を見つけたことがある。すこし太い気がしたが、ためしに採ってかえり、調理してみた。食べてみたところ、軟らかく、日本のワラビとまったく変わりがなかった。
ワラビを採っているとき、荒野を散策していたひとりの男が、「何を採っているのだ」と声をかけてきた。ワラビや山菜のことを英語で何というのか分からなかったので、とっさに「ワイルド・ヴェジタブルだ! 料理して食うとうまいんだ」と答えた。するとその男は、変な奴だという顔をしてわたしを見ると、「ふん!」と言っただけで行ってしまった。
英語では、ワラビなど、葉の大きいシダ類を「ブラッケン」と総称する。
ドクター・ジョンソン*は、彼の辞書のなかで、オート麦を「穀物の一種で、イングランドではふつう馬に食わせるが、スコットランドではそれが人間を養っている」と説明した。
彼の辞書には「ブラッケン」の項目がない。そこでわたしは、「ブラッケン」の項目を追加し、「荒野に生える葉の大きいシダ類の総称で、イングランドでは羊も食わないが、日本ではこれの一種を「ワラビ」と称し、その新芽を食材として珍重する」と説明することを提案したい。
荒野をよく見ると、ワラビはあちこちに生えている。見渡すかぎりワラビのこともある。かつてエコノミック・アニマルと揶揄されたことのある日本人のなかには、これを見て「ビッグ・ビジネスのチャンスだ!」と思う者がいるかもしれない。しかしいまのところ、スーパーの野菜売り場に「イングランド産のワラビ」は並んでいないので、ホッとしている。
ヨークシャーでワラビがたくさん生えている場所は、日本人旅行者が押し寄せて根こそぎ採ってしまうかもしれないので、伏せておくことにする。
ワラビが生い茂った荒野は、晩秋になると赤褐色に染まり、ヒースの生い茂った濃い緑色の荒野や、明るい緑色の牧草地と、あざやかな対比を見せる。
<英国人のためのワラビの調理法>
ワラビは、20〜30cmに伸びた新芽を採ってくる。灰またはベイキング・パウダーを少量くわえた水を沸騰させたあと、そこにワラビを入れて数分間ゆでる。水洗したあと、3、4cmの長さに切り、好みの味付け――たとえば、少量の醤油と砂糖を加えただし汁など――で調理する。
Not Only heather but brackens grow in patches in the moorland. When I was
rambling around the moor in spring, I found the bracken which is very similar
to "warabi", a kind of Japanese bracken.
We, Japanese like to eat newly growing bracken fronds as the edible wild
plant. Today, they are valuable dainties in Japanese traditional dishes.
When I was picking some fronds to cook, a man sauntering came close and
asked me what I was doing. I replied I was picking fronds of brackens and
that they were delicious to eat. The man only said "Humph!" looking
at me as if I had been strange, and went away.
Dr Johnson explained oats that "a grain, which in England is generally
given to horses, but in Scotland supports the people" in his dictionary.
He did not give an account of "bracken", therefore I would like
to propose to add the entry word of "bracken" and explain it
as follows: "a fern, which in England is not eaten even by sheep,
but in Japan a kind of fern is called "warabi" and the new fronds
of it are valued as the ingredient of traditional dishes".
Some of Japanese businessmen, once called economic animals, might think,
looking at the bracken spreading over the moor before them, it was a big
business chance. But I am relieved so far not to see "warabi from
England" at supermarkets.
<The recipe of warabi for English people>
Pick the new fronds of bracken grown in 8 to 12 inches height. Boil them
in water with ash or baking soda for a few minutes. After that, rinse out
with cold water and cut them about one and a half inches in length. Eat
them with soy sauce or further cook with your favorite seasonings, for
example, with broth, soy sauce and sugar.
*ドクター・ジョンソン (Dr Johnson) サミュエル・ジョンソン(Samuel Johnson, 1709-84)のこと。英国の辞書の編纂者で批評家、詩人。辞書編纂の原則を確立したと言われている。かれの辞書は、語彙の一般的な説明だけでなく、ときには皮肉たっぷりの個人的見解を加えているのが特徴。「オート麦」のほかで有名な例に、「パトロン」がある。彼は一般的な説明につづいて「パトロン」を、次のように記している。「ふつうは傲慢な態度で援助し、お世辞で報われる哀れな人」
